Prebiotic Fiber Granola

Are you getting sick of your current quarantine meals? If your gut isn't feeling so happy or healthy, and you need a boost of prebiotic fiber rich snacks or breakfasts, you're in the right place!
Today we're sharing a simple and satisfying granola recipe from @Thehealthyavo. This protein packed, fiber-rich granola, will keep you satiated for hours!
Prebiotic Fiber Granola
Ingredients:
- 1 cup rolled oats
- 1/3 cup cashews
- 1/3 cup almonds
- 1/3 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/3 cup walnuts
- 1/4 cup dried cranberries
- 1 tbsp Daily Uplifter
- 2 tbs coconut oil
- 2 tbs sweetener (either honey or maple syrup)
- 3 tbsp almond butter
- 1 tsp cinnamon
- 1 tsp vanilla
Instructions:
- Mix rolled oats, seeds, and nuts. Chop everything into smaller pieces or place into a food processor.

Add back into a big bowl and mix in 2 tbs melted coconut oil, 2 tbs honey (add more depending how sweet you want yours), and 3 tbs almond butter. Give it a nice stir, and then add in 1 tbsp Daily Uplifter, cinnamon, and 1 tsp vanilla.
- Place on a lined baking tray and bake for about 15 min. Once done don’t stir the granola, leave it to cool for about 30 min. Once cooled, break into big chunks and enjoy!
