Prebiotic Fiber Raspberry Sponge Cake

Prebiotic Fiber Raspberry Sponge Cake
Ingredients:
Sponge:
- 3 eggs
- 2 tbsp maple syrup
- 2 tsp vanilla
- 1/4 cup coconut flour
- 2 tbsp coconut oil
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
Filling:
- 1/2 cup mashed raspberries
- 1/4 cup vanilla yogurt
- 1 serving Daily Uplifter
Coating:
- 1/4 cup coconut cream
- 1/4 cup dark chocolate
- 1 tsp vanilla
- Pinch of salt
- 1/2 tsp coffee
- 1 cup shredded coconut
Instructions:
- Blend sponge ingredients
- Bake at 350°F for 12-15 mins
- Melt chocolate, coffee, and salt (coating)
- Melt vanilla and cream (filling)
- Slice sponge cake
- Coat with chocolate coating, toss in coconut
- Chill for 5 minutes
- Add berries and cream
