Gut-Healthy Prebiotic-Fiber Pumpkin Spice Cookie Dough
Hey Everyone,
We have an AWESOME gut-healthy recipe to share with you all. Caitlin from @kalefornia_kravings has made another delicious fall recipe... edible pumpkin spice cookie dough! This uplifting treat is a 2-in-1! Eat it raw or bake it into delicious prebiotic fall cookies. The choice is yours!
Ingredients:
1 can chickpeas (drained, rinsed & peeled)
1/3 cup pumpkin purée
1/4 cup cashew butter
8 dates, pitted
2 tsps Uplift Food Daily Uplifter
1 tsp vanilla
1 1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup dark chocolate chips (or non-dairy chocolate chips)
Instructions:
1. Soak the dates in hot water for at least 30 minutes. (You can skip this step but it makes everything blend easier.)
2. Add the chickpeas, pumpkin, cashew butter, daily uplifter, vanilla, cinnamon, nutmeg & salt to a food processor. Pulse it until it’s combined.
3. Add the dates & pulse until smooth.
4. Stir in the chocolate chips & serve!
