Prebiotic Fiber Packed Blueberry Muffins

We are excited to share with you this creative healthy recipe from food blogger and nutrition student Lauren from @Thinkoutsidetheplate who concocted a mouthwatering gut healthy, prebiotic fiber packed blueberry muffin recipe...it's no joke!
Prebiotic Fiber Packed Blueberry Muffin Ingredients:
3 eggs
4-6 tablespoons melted coconut oil
1 teaspoon vanilla extract
1 tablespoon freshly squeezed lemon juice
1 teaspoon baking soda
2 tablespoons flaxseed meal
1/2 cup coconut sugar
1 teaspoon cinnamon
1 teaspoon salt
1 tablespoon Uplift Food Daily Uplifter
1 cup oat flour OR 2 cups almond flour
1 1/2 cup blueberries
Instructions
Pre-heat the oven to 350 degrees.
In a large bowl, combine eggs, coconut oil, vanilla, lemon juice, baking soda, flax meal, sugar, cinnamon, salt, and Uplift Food Daily Uplifter and mix until well combined.
Add in the oat flour and combine. Then, add in one cup of blueberries, and leave the remaining for topping.
In a well greased muffin tray, pour the batter neatly into each muffin molder, making sure to leave room for it to rise. Place blueberries on top.
Place into the oven and bake for 25 minutes.
