Prebiotic Fiber Lemon Raspberry Muffins

Instagram influencer @an_essential_life just created an epic prebiotic fiber-rich, gut-healthy muffin recipe, containing lemons, raspberries, and the Daily Uplifter. What could be more nutrient boosting and gut-healthy than this combo?!
Prebiotic Fiber Lemon Raspberry Muffins
Ingredients:
- 1 3/4 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon pink salt
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 2 eggs
- 1 cup plain whole yogurt
- 2 teaspoons vanilla extract
- Zest of small lemon (1/2 tsp)
- 1 1/2 cups raspberries
- 1 Tablespoon daily uplifter powder
Instructions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the flour, baking powder, baking soda, uplift powder, and salt. Blend well with a whisk.
- In a medium mixing bowl, combine the oil and maple syrup with a whisk. Add the eggs and beat well, then add the yogurt, vanilla and lemon zest. Mix well.
- Pour the wet ingredients into the dry and mix, just until combined. Gently fold the raspberries into the batter.
- Divide batter into 12 lined muffin cups. Bake for 20 minutes or until golden.
