Prebiotic Fiber PB&J Oatmeal Bars

We're currently reminiscing and getting nostalgic over our favorite childhood foods- Peanut butter and jelly sandwiches! Luckily, @hold_the_fries concocted these prebiotic fiber-filled PB&J oatmeal bars, and we couldn't be more excited! These bars will fuel your gut all day long...
Prebiotic Fiber PB&J Oatmeal Bars
Ingredients:
- 3 cups rolled oats, divided
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 1/2 teaspoons pure vanilla extract
- Dash of salt
- 1/3 cup fresh Raspberries
- 1 tablespoon of Daily Uplifter
Instructions:
- Take 1 1/2 cups of the oats and process them in a blender or food processor until they are a fine crumb.
- Add the crumbed oats plus 1 1/2 cups oats, peanut butter, honey, vanilla and salt and mix well.
- Use a little more than ½ of the mixture into the bottom of the pan. Use your hands or a spatula to spread it evenly into the bottom of the pan and press it down firmly.
- Spread jam across the top layer.
- Sprinkle the remaining oats on top.
- Bake at 375 for 40 minutes or until top is lightly browned.
