Prebiotic Pumpkin Muffins with Cream Cheese Frosting!
We're very excited to share another delicious, gut-happy recipe with you! Hannah from @lovelydelites created a great vegan and gluten free muffin! It's a perfect nutrient-dense and antioxidant rich breakfast or snack.

- 1 cup coconut flour
- 2 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of sea salt
- 1.5 cups pumpkin puree
- 1/3 cup coconut sugar
- 1/2 cup dairy free yogurt
- 2 flax eggs
- 2 Tbsp melted coconut oil
Mix dry ingredients in a separate bowl from wet. Add wet ingredients to dry and mix until combined. Pour 3 Tbsp worth of batter into cupcake liners and flatten with fingers. Bake in oven at 350 for 40 minutes.
Cream cheese frosting ingredients:
-1 scoop The Daily Uplifter (purchase here!)
- 8 oz vegan cream cheese
- 1/4 cup vanilla dairy free yogurt
- 3 Tbsp Monk fruit sweetener
Add all ingredients to a bowl and whisk until fluffy. Spoon 1 Tbsp worth onto each cooled cupcake and top with cinnamon and pumpkin seeds.
