Uplifting Red Velvet Cupcakes!
Hey Everyone!
Sophie from @thehealthyaddiction posted a great red velvet cupcake recipe featuring The Daily Uplifter! This is the perfect recipe for a nutrient dense, prebiotic rich healthy treat!

*Makes 10-12 cupcakes
Ingredients:
- 1 + 1/3 cup almond flour
- 1/2 cup stevia
- 1/4 cup coconut oil
- 1 egg
- 2/3 cup buttermilk
- 1 scoop The Daily Uplifter
- 2 tbsp cocoa powder
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 1/2 tsp distilled white vinegar
- 1/2 tsp baking soda
- 1/4 tsp salt
Cream Cheese frosting:
- 8oz cream cheese
- 2 tbsp stevia
- 1 tsp vanilla extract
- 3 tbsp maple syrup
Directions:
1. Preheat oven to 350
2. Combine all ingredients in a bowl and mix until it’s all well combined.
3. Bake for 20-25 minutes
4. Let cupcakes cool completely and then frost!
"Buttermilk:"
- 1 cup unsweetened almond milk
- 2 tbsp lemon juice OR apple cider vinegar
**Mix almond milk and lemon juice with let it sit for at least 10 mins.
