Gut Happy Valentine's Day Prebiotic-Fiber Brownie Cupcakes

How many of you find yourselves stressing about the holidays because of all of the indulgent food? Well, thanks to @emsswanston you won't have to worry about any of that this Valentine's Day!

Ingredients:2 small {cooked} beets (not pickled)2 eggs (or flax eggs if vegan)1/2 cup maple syrup1 Tablespoon of vanilla2 Tablespoons of coconut oil3/4 cup almond flour4 Tablespoons of cacao2 Tablespoons of coconut flour1/2 teaspoon of instant espresso (optional but recommended)1/4 teaspoon of cinnamon1 teaspoon of baking powder1/2 teaspoon of baking sodaDark choc, roughly chopped - measure with your heartFor the frosting:1/2 cup vanilla yoghurt - I mix in 2 Tablespoon of before you speak coffee all natural vanilla creamer (optional) + 1 tsp of Uplift Food Daily UplifterMethod:1 - Pre-heat oven to 175'C/350'F2 - Line a 6 cup muffin tray with paper or silicon cases (or you can grease and flour) then set aside.3 - Place all ingredients apart for the mud cakes , apart from the chocolate, into your food processor or blender and blend/process until smooth and well combined.4 - Fold through chopped chocolate.5 - Scoop mud cake batter in to your prepared muffin tray and bake for 15-20 minutes, until the tops spring back when gently pressed and a toothpick has just a few crumbs attached when inserted in to the middle.DO NOT OVER BAKE OR THEY WILL BE DRY!Sorry for yell but this is very important. No one wants a dry mud cake!6 - Set aside to cool.While your cupcakes are cooling prepare the frosting:1 - Place all ingredients into a small bowl and stir until smooth, creamy and well combined.Taste and adjust to desired level of sweetness - add some monk fruit sweetener, stevia or sweetener of choice to taste if necessary.2 - Spread (or pipe) on to your deliciously indulgent, secretly healthy red velvet mud cakes.
